Marilyn Biscotti Named Senior Category Manager – Hospitality & Food

Systemwide Procurement (SWP) is thrilled to announce that Marilyn Biscotti will officially take on the position of Senior Category Manager – Hospitality & Food as of March 4, 2024. With a proven track record of excellence and leadership in strategic sourcing and supply chain management in the food industry and beyond, Marilyn brings a wealth of experience and expertise to this role.

Marilyn has supported the Hospitality & Food Category since June 2023, and has excelled in developing new manufacturing relationships, improving existing relationships and identifying the need for better data refinement to support UC dining facilities. She will be an essential partner to campus dining facilities to help them improve cost, drive local/sustainable food procurement, and facilitate broader UC goals into operational practices. 

Prior to joining UC, Marilyn led strategic sourcing initiatives for AAA Auto Club Enterprises across eight headquarters, spanning 23 states and 330 branch offices. In this role, she achieved a 35% increase in contracts by improving strategic RFP processes and negotiated significant cost savings on construction projects and cafeteria redesigns.

Before that, as Vice President of Product Development for Johnny Rockets Group, she was instrumental in the expansion of Johnny Rocket restaurants from 193 to 297 locations. She also managed purchasing contracts exceeding $40M and fostered relationships with key franchise partners.

And, as Executive Director of Magna Entertainment Corporation, she maximized bottomline results by centralizing procurement functions and increasing annual revenue streams for restaurant and racetrack operations.

Earlier, as Director Shared Services/Purchasing for Universal Studios Hollywood, Marilyn oversaw all facets of purchasing, and implemented system integrations and cost-saving measures while managing diverse business units.

In her spare time, Marilyn likes to produce themed dinners and events, host wine tastings, hike, and leads a Life Group.
